It is processed like flour (lucuma powder) in order to satisfy the markets during the seasons when it is not available as fresh fruit. The flour of lucuma is good to be used for fine confectionery and exotic food preparations. In peru, there is even a higher demand for lucuma ice cream than for the commonly consumed strawberry, chocolate and vanilla flavors.
