Isomalt (also called palatinitol) is an excellent sugar replacer derived exclusively from sucrose. It is manufactured in a two-stage process:first,sucrose is enzymatically transformed into isomaltulose.Second, the isomaltulose is hydrogenated to produce isomalt.
In fact, isomalt is composed of 6-O-alpha-D-glucopyranosido-D-sorbitol (1,6-GPS) and 1-O-alpha-D-glucopyranosido-D-manitol dihydrate(1,1-GPM-dihydrate).Therefore, isomalt, which contains 5% water of crystallisatain, is an odorless, white crystalline substance.
It is available in a wide range of variants and particle size from granual to powder-to suit any application. The sweetness of isomalt is about half of sucrose.
