| About us | An enthusiastic project that is coming true month-on-month: to be considered 'Vino de Pago' - Single Vineyard Designation of Origin - in the near future. Nowadays our wines are LA MANCHA D.O. PAGO DE LA JARABA has 80 ha (198 acres) of Tempranillo, Cabernet Sauvignon and Merlot, planted on pebbled, gravelly, alluvial soil on a gently sloping plain situated at 750m above sea level. The vines are trained on wires with drip irrigation. We use only organic fertilizer from our own sheep (sheep manure produced on the same land of our "Finca" to improve the structure and texture of the terrain), practice careful vine canopy management and perform green harvesting, or cutting inferior green grape bunches from overloaded vines to promote better quality in the grapes that are actually harvested. We produce 500,000 kg of grapes in an average year at yields of 6,000-8,000 kg/ha and plan to produce a maximum of 500,000 bottles when the winery is at maximum production levels. We seek for the combination of the practices of the traditional viticulture with the most up-to-date wine-making technology. We go against any kind of aggressive processing. We use a grape selection table to eliminate bad bunches and have sophisticated computer-controlled devices that control the movement of the grapes, must and wines through the winery. As well as Stainless steel tanks and Cement, epoxy-lined tanks, we also have wooden Radoux upright, 5,000-10,000-liter capacity wooden vats for doing malolactic fermentation and holding operations. Finally, our wines are aged and gained more complexity in 225-liter capacity wooden barrels (French and American). We advocate spontaneous clarification and natural filtration processes. LA JARABA strives for grapes that are a little bit beyond the point of ripeness, assures that we always have ripe tannins. We want the wines to be warm, sweet and very drinkable. Our wines are elaborated from selected grapes of Tempranillo, Cabernet Sauvignon and Merlot, assembled every year in the necessary and different percentage that allow us to achieve the desirable wine -depending on the previous tasting and selection before the assemblage of varieties-. The main variety is usually the indigenous "Tempranillo", result of our deep knowledge of the vineyard and the indigenous varieties. We seek for a sustainable agriculture in our land. In Finca -estate- of PAGO DE LA JARABA we have a selection of species and varieties that are well suited to the site and to conditions on the soil, having a diversification of crops (mainly Cereal -wheat, barley-, Sunflower and Pea) and some hectares of scrubland. Also in our land, sheep and pig flocks are management to enhance and protect soil quality. LA JARABA is a very traditional farming, and their involved people are from the vicinity of the estate, looking for efficient and humane use of inputs. Our commercial strategy is "to do the things properly", marketing wines for drinking, not for collection, so wines of high quality at very reasonable prices.
