About us | Domecq's pigs are not slaughtered by herds but are selected from the different herds when they reach the right weight and size. In our project we are applying the knowledge acquired over 75 years of animal breeding, to which we have added special care in the treatment of the animals. All the development of the pigs is being personalized so that by the time they get to the grazing pastures they will have the best organoleptic conditions required in their future ham. To that end, we believe that their genetic make-up is of fundamental importance, that is to say the sub-species of 100% Iberian pig that we are breeding and secondly its handling, because just as in wines 80% of their quality resides in the grapes and in the handling of the vine, we believe that in ham it resides in the pig and the care it is given. The hams are dried in the Sierra de Huelva, which to us is the capital of ham, where the special landscape and the special climate make for special curing |
